I had a little choco craving this week and I couldn't think of anything better than some fluffy cupcakes, and to up the fluffy factor I added the creme center and.... Wowza! I could eat the entire bowl. And I'm not a frosting person. So even if you don't go through the trouble of filling in the cupcakes, you need to try this white stuff!
Ingredients
1 package (18-1/4 ounces) triple chocolate cake mix
3/4 cup butter (or shortening)
2/3 cup confectioners' sugar
1 jar marshmallow creme
1 teaspoon vanilla extract
1 can (16 ounces) chocolate fudge frosting
Prepare and bake cake according to package directions for cupcakes, using paper-lined muffin cups. Cool for 10 minutes before removing from pans to wire racks to COOL COMPLETELY. This is a must!!!! Otherwise your fluffy heaven melts into glue.
In a large bowl, cream butter and sugar until light and fluffy. Beat in marshmallow creme and vanilla.
Cut a small hole in the corner of a pastry or plastic bag and put in the creme...this makes filling 10x easier. Fill cupcakes with cream filling. Frost with chocolate frosting.
