Foodie Friday (on Tuesday): Thanksgiving Turkey Dinner made easy

I have a confession--If it weren't for my family members through the years cooking a bird, I probably wouldn't have anything more than a store bought roast turkey breast or even (gasp! a turkey frozen dinner) ...this girl ain't so good at cooking meat.  I'm always afraid to under cook it and end up cooking it until its leathery.  Any meat pros who have suggestions are welcome to advise, otherwise I'm sticking to baking.

So if you can't stand to have a turkey sand which ("Monica calls it the 'Moist-Maker' and its MY SAAANDWHICH!!!!!") here is an amazing crock pot recipe that does double duty, turkey and stuffing, just don't forget to pick up some gravy if your a gravy kind of peep.  Happy Thanksgiving!



Crock pot Turkey with Stuffing

1 Tbsp. olive oil
1 onion, chopped
2 Tbsp. apple jelly
6 oz. pkg. turkey flavor stuffing mix (one step brand)
3/4 cup water
2 lb. boneless, skinless turkey breast half
salt and pepper to taste

Heat oil in large skillet. Add onion and cook for 5 minutes until light brown, stirring frequently. Add jelly and heat for 1 minute longer or until golden brown.
Spray a 4-6 quart slow cooker with nonstick cooking spray. Place stuffing mix in prepared cooker. Drizzle with water and mix gently. Sprinkle turkey with salt and pepper and place on stuffing mix. Spoon onion mixture over turkey and spread evenly.
Cover and cook on low for 5-6 hours. Serves 5
