In the event of the Lenten Season, I have not only decided to give up carbonation (I love you Red Bull!), but also eat healthier via the Low Glycemic Index, so bear with me friends. Any diet change to me isn't going to work without my chocolate. A girl cannot live without chocolate!! This recipe is a cross between a brownies and heaven. Enjoy!
Flourless Chocolate Cake
6 eggs
12 oz unsweetened chocolate
1/2 cup butter
1 cup Stevia
1/4 cup sugar
powdered sugar for dusting
Preheat oven to 325 degrees. Separate egg whites from yolks, whites in one bowl, yolks in another. Set aside.
Melt chocolate and butter in microwave for 30 second intervals, stir until smooth. Stir in stevia and sugar until combined. Then add yolks one at a time, whisking after each addition.
In the egg whites bowl beat with mixer on high until stiff peaks form (should take several minutes). Then gently fold into the chocolate mixture.
Pour into a 9" round greased cake pan or spring form pan and bake for 1 hr. It will rise up in the oven, and when you take it out it will fall. Let cool for at least 1 hour. Dust with Powdered sugar.
