Huge fan of Deviled eggs, in fact i'm pretty sure they are an amazing crowd pleaser- They never seem to last, but if they do, they are great to have in the fridge as a little protein snack and so easy! So on my quest to find my favorite version (like looking for the holy grail, because they are all pretty dang good).
Bacon and Cheese Deviled Eggs
12 hard boiled eggs
1/2 cup + 2 T of real mayo
6 T of shredded sharp cheddar cheese
4 slices of cooked, crumbled bacon , plus some to garnish
1 seeded and chopped fresh jalapeno (optional)
1 T yellow mustard
Pinch of salt
Paprika to garnish
Slice eggs lengthwise and place all yolks in a bowl. Add may, cheese, bacon, mustard, and salt, and mix together.
Fill each egg half with a rounded teaspoon full of yolk mixture. Garnish with paprika and bacon crumbles or any other color you have on hand (chopped bell peppers give it another nice crunch). Chill until ready to serve.
